Oxtail is the culinary name for the tail of cattle. It is a gelatin-rich meat and is normally slow cooked or cooked in a pressure cooker.
Our oxtails weigh about 2# and are notched in 4 main sections but you can cut the pieces smaller at the joints which are about every 2".
Just a note about the blue mark visible on the notched tail: It is made from a food grade plant based dye (roots or berries) and is safe to eat. It gives evidence that the meat was inspected and passed.
